Cheese Sauce Ideas

Horseradish Swiss Cheese Sauce

Ingredients:

2 CupsAFP Swiss Cheese Sauce
1 oz.Prepared Horseradish
1 tsp.Worcestershire Sauce

Directions:

  • Blend cheese sauce with prepared horseradish and Worcestershire sauce. Heat to desired temperature and serve on Philly cheese steak sandwich.

Mac & Cheese

Ingredients:

1 lb.Mini Penne Pasta
4 CupsAFP Cheddar Cheese Sauce
½ Cup - 1 CupMilk
1 CupPanko Style Bread Crumbs
1 Tbsp.Parsley (Chopped)

Directions:

  • Pre heat oven to 350ºF
  • Blanch pasta ala dente.
  • Fold with Cheese Sauce.
  • Add milk to adjust to smooth creamy consistency.
  • Place pasta mixture in a shallow baking dish.
  • Top with Panko Style Bread Crumbs and chopped parsley.
  • Bake for 8-10 minutes until bubbly and golden brown.

Mexican Lasagna

Serves 4-6

Ingredients:

3 Tbsp.Vegetable Oil
2 lbs.Ground Chicken Breast
2 Tbsp.Chili Powder
2 tsp.Cumin
½ CupRed Onion (minced)
1 – 15oz. canBlack Beans (drained)
1 CupYellow Corn (frozen)
1 – 9oz. CanAFP Bean Dip
1 pkg. 10 inchFlour Tortillas
1 – 15oz. CanAFP Cotija Cheese Sauce
1 CupShredded Cheddar Cheese
2 ea.Scallion (chopped)
Salt and Pepper

Directions:

  • Preheat Oven to 375ºF
  • Preheat a large skillet over medium high heat.
  • Add 2 Tbsp. vegetable oil.
  • Add chicken; Brown the meat, 5 minutes. Add onion.
  • Season mixture with chili powder, cumin, salt and pepper.
  • Coat a 10-inch cake pan with remaining vegetable oil.
  • Begin assembling lasagna in a 10-inch cake pan starting with tortilla, bean dip, seasoned chicken mixture, black beans, corn, and then Cotija Cheese Sauce. Repeat as needed until all ingredients are used.
  • Top layered lasagna with shredded cheddar cheese.
  • Bake lasagna 12 to 15 minutes until cheese is brown and bubbly. Top with the scallions and serve.

Queso Fondue

Ingredients:

18 oz. (2 – 9oz. Cans)AFP Cheddar Sauce
18 oz. (2 – 9oz. Cans)AFP Salsa
1 loafBread (cut in cubes)

Directions:

  • Mix Cheese Sauce and Salsa together and heat over low heat or microwave to desired temperature.
  • Pour into fondue crock.
  • Serve with bread or tortilla chips.

Pudding Ideas

Profiterole / Napoleon filling (Pastry Cream)

Ingredients:

3 lbs.AFP Vanilla Pudding
1 lbs.Smithfield® Cream Cheese (room temp.)

Directions:

  • Blend Vanilla pudding with Cream Cheese. Place in a shallow pan and refrigerate overnight.
  • Use as you would pastry cream for fillings and Napoleons etc.

Dip Ideas

4 Layered Mexican Dip

Serves 6-8

Ingredients:

1 ea.9 oz. AFP Guacamole Style Dip
1 ea.9 oz. AFP Bean dip
1 ea.9 oz. AFP Salsa
1 ea.9 oz. AFP Cheddar Cheese Sauce
1 CupShredded Mozzarella cheese

Directions:

  • In a 8 x 8 shallow glass-baking dish begin layering with the Guacamole followed by Bean dip, Salsa and Cheese Sauce.
  • Top with shredded Mozzarella cheese and serve with tortilla chips.

Chicken Enchiladas

Ingredients:

2 CupsCooked Chicken (shredded)
10 oz. canKidney Beans (drained)
9 oz.AFP Bean Dip
6 ea.8-Inch Tortillas
18 oz.AFP Salsa
¼ CupCrosscut Scallions
1 tsp.Cilantro (chopped)
1 – 15oz. CanAFP White Queso Sauce split
evenly into separate containers

Directions:

  • Preheat oven to 375ºF
  • Mix cooked Chicken, kidney beans and Bean Dip very well. Season with salt and pepper.
  • Spoon ¼ cup chicken mixture in each tortilla. Fold over filling.
  • Place rolled enchiladas in pan with seam side down.
  • Top with first container of White Queso, spreading evenly.
  • Bake for 30 minutes or until bubbly.
  • To serve, place Salsa on bottom of plate and top with 3 enchiladas.
  • Heat remaining White Queso and pour over hot enchiladas.
  • Garnish with chopped scallions and cilantro.

Extreme Nachos

Ingredients:

8 oz.Tortillas Chips
1 ea.Grilled Chicken Breast (cut into strips)
3 – 4 ea.Jalapenos (thinly sliced)
1 CupMinced Red Onion
1 bunchScallions ¼ inch crosscut
2 CupsAFP Salsa
½ CupBlack Beans (drained)
9 oz.AFP Jalapeño Cheese Sauce

Directions:

  • Pre heat oven to 425ºF
  • Place tortilla chips on oven proof serving tray.
  • Arrange remaining ingredients on tortillas chips.
  • Top with Cheese Sauce.
  • Place in oven for 4-5 minutes to heat. Serve immediately.

Serving suggestion:

  • Serve with AFP Guacamole Style Dip.

Spread Ideas

Smoked Salmon and Cucumber Garlic Spread Focaccia

Serves 4-6

Ingredients:

1 loafFocaccia
2 ea.Seedless Cucumbers
2 – 3.6oz.Cups AFP Cucumber Garlic Spread
8 oz.Smoked Salmon Sliced
2 oz.Micro green or preferred salad mix

Directions:

  • Slice cucumber lengthwise about 1/8 inch thick set aside.
  • Split focaccia in half to form a bottom and a top layer.
  • Place bottom layer on flat work surface cut side up (center).
  • Spread Cucumber Garlic spread evenly over the cut side of the bottom layer.
  • Shingle cucumber slices on top of spread.
  • Neatly arrange smoked salmon on top of cucumber slices.
  • Top Smoked Salmon with salad mix and then place top layer on top to create a large sandwich.
  • Place tooth picks at desired thickness to hold sandwich in place for slicing. Slice sandwich to desired size and serve.

Sauce Ideas

Risotto

Ingredients:

1 Qt.Chicken Stock
2 Tbsp.Olive Oil
½ CupMinced Onion
2 CupsArborio Rice
1 CupDry White Wine
½ CupAFP Alfredo Sauce
1 CupFrozen Peas (thawed)

Directions:

  • Bring Chicken stock to a boil and set aside.
  • Heat a medium size heavy gauge sauce pot over medium to medium-high heat with olive oil.
  • Add the onions and sweat for 2 to 3 minutes.
  • Add rice and toast 2 to 3 minutes more.
  • Add wine and cook it out completely, stirring occasionally, 2 to 3 minutes.
  • Ladle in stock about 3 oz. at a time. Allow liquids to evaporate each time.
  • When all stock has been added begin adding AFP Alfredo Sauce in two intervals.
  • When risotto is cooked and creamy add the peas. Season with salt and pepper and serve immediately.

Vodka Sauce

Serves 4-6

Ingredients:

16 oz.AFP Alfredo Sauce
1 CupDiced Tomatoes (drain if using canned)
3 oz.Vodka
1 Tbsp.Tomato Paste
1 Tbsp.Chopped Parsley

Directions:

  • Bring Alfredo sauce to a boil in a sauté pan.
  • Add remaining ingredients and simmer for 3 minutes.
  • Toss with the desired pasta and serve.
